flesh とは？

一文字違いの、freshは、カタカナにもなっている「フレッシュ」の事で、「新鮮な、真新しい」という意味になります。

ところが、r を l に変えたfleshになると、「（動物・魚などの）肉、果肉」という意味になります。

Longmanの英英辞典では、以下のように定義しています。
the soft part of the body of a person or animal that is between the skin and the bones
（人や動物のやわらかい部分で、皮と骨の間にある）

つまり、「肉」ということになりますね。
