cut one’s teethとは？

文字通り訳すと、誰かの歯を切るとなってしまいますが、cutには、「（赤ちゃんの歯が）生える」という意味があります。
よって、cut one’s teethは、乳歯が生えてくる事を意味しますが、転じて、「最初の経験をする、経験を積む」という意味になります。
Longmanの英英辞典の定義も見ておきましょう。
[cut one's teeth]to get your first experience of doing something and learn the basic skills:
(何かをする最初の経験をする、基礎的なスキルを学ぶ）
